 West Restaurant, nestled at the gateway to Connemara. We strive to source the finest Seasonal ingredients from our rich bounty here in the West and further across the island of Ireland.

Working closely with our Farmers, Growers and artisan producers, we allow nature and the ever changing food seasons to mould our menu for your evening.

Nathan Hindmarsh

HEAD CHEF

Nathan trained and worked in many of London and Paris’s finest restaurants before making his move to the West of Ireland and taking up the position of Head Chef of West.

West's motto is 'true to the region, true to the season'

With a style of cooking based on beautiful presentation, - Nathan’s focus is on using local Galway producers who are passionate about excellent products. ‘‘I then add my own touch of heat or spice giving my dishes just a little something extra.”
